Quinoa Crusted Chicken Breast

Replace your usual flour and deep frying with deliciously nutritious quinoa and baking.

This is what you'll need

  • 2 Chicken Breasts, Padded Dry

  • 1 Cup of Cooked Quinoa

  • 1 Egg, Beaten

  • 1 Tbsp Paprika

  • Thyme


    1. Preheat your oven to 350F

    2. Spread your cooked quinoa over a baking sheet and bake in the oven for 20 minutes

    3. Place the roasted quinoa in a bowl and break up the clumps that might have formed

    4. Cut up the Thyme (the finer the better!) and add to the quinoa with the paprika (feel free to add more spices)

    5. Dip the chicken breast in to the beaten egg and then cover with the quinoa mixture on both sides

    6. Place the chicken breasts on the baking sheet, and bake for another 20 minutes or until cooked through
