Vegetarian Breakfast Burrito

We love healthy breakfast meals at LunchIn. Why? Because starting your day off healthy makes you feel better the rest of the day. This burrito is delicious, filling and contains a fair amount of protein as well!

This is what you'll need

  • 1/4 cup of Frozen Corn

  • 1/2 cup of Black Beans, Drained

  • 1/2 Packet of Taco Seasoning (Mild)

  • 1/4 cup of Salsa

  • 1/4 of a Red Pepper, Diced

  • 2 Large, Organic Eggs

  • 1/4 cup of Milk

  • 2 Whole Wheat Tortillas

  • 1/2 cup of Shredded Cheese


    1. Put some olive oil in a skillet over medium heat
    2. Add the red pepper and let them saute for 5 minutes
    3. Meanwhile, add the eggs and milk to a bowl and beat until the mixture starts to get some bubbles (the more, the fluffier in the end!)
    4. Add black beans, corn, salsa, taco seasoning
    5. Let it simmer for 5 minutes
    6. Add shredded cheese on top of the mixture and let it melt
    7. Place the mixture on a tortilla and wrap your burrito!
