Blueberry Grilled Chicken Salad

A standard grilled chicken salad is boring. Try this easy summery recipe for a great satisfying lunch this week. Blueberries add both a lot of nutrition and a lot of flavour to the mix.

This is what you'll need

  • 4 cups mixed greens

  • 1 cup arugula

  • 1 cup blueberries

  • 1/4 cup slivered almonds

  • 2 cups cubed chicken breasts, cooked


  • 1/4 cup olive oil

  • 1/4 cup apple cider vinegar

  • 1/4 cup blueberries

  • 2 Tbsp Honey

  • Salt & pepper to taste


    1. In a large bowl, toss all the salad ingredients together until well mixed.
    2. To prepare the dressing, blend all ingredients smooth in a blender and then add salt and pepper (a fork in a bowl will do as well as long as you make sure it all blends well)

    If you are making the salad ahead of time, store the dressing in a separate container.

    I’m wondering what is the driver for the high carb count on this? I’ve seen similar recipes with corn, and not quite the same level of carbs. Is it hidden in the seasonings perhaps. Joseph Donahue
