
Blueberry Grilled Chicken Salad
A standard grilled chicken salad is boring. Try this easy summery recipe for a great satisfying lunch this week. Blueberries add both a lot of nutrition and a lot of flavour to the mix.

This is what you'll need
- 4 cups mixed greens

1 cup arugula
- 1 cup blueberries
- 1/4 cup slivered almonds
- 2 cups cubed chicken breasts, cooked
Dressing
- 1/4 cup olive oil
- 1/4 cup apple cider vinegar
- 1/4 cup blueberries

2 Tbsp Honey
- Salt & pepper to taste
Directions
- In a large bowl, toss all the salad ingredients together until well mixed.
- To prepare the dressing, blend all ingredients smooth in a blender and then add salt and pepper (a fork in a bowl will do as well as long as you make sure it all blends well)
If you are making the salad ahead of time, store the dressing in a separate container.
